Chicken Karaage, Japanese Double Fried Chicken + Smak-Tini

Ingredients:
- 1lb Boneless chicken thighs cut to bite size pieces 1/2 tsp grated ginger
- 1 clove garlic grated 1/2 tbsp soy sauce 1/2 tbsp sake
- 1/2 tsp roasted sesame oil pinch white pepper Vegetable oil for frying
- 2-3 tbsp potato starch
Directions:
Combine chicken with seasonings and marinade for at least 30 minutes. Heat 2″-3″ oil in the cast iron skillet to 325°F. Drain off excess marinade and add potato starch directly onto the chicken and mix until lightly coated. When oil temperature has reached 325°F, add chicken into the oil without overcrowding the pan. Deep fry for 90 seconds and repeat until all the chicken has gone through its first fry at 325°F. Transfer fried chicken onto a wire rack. Increase the oil temperature to 375°F. Re-fry chicken for 30 seconds, or until golden and crispy. Serve with Japanese Mayo, Japanese 7 spice and a lemon wedge.
For the “Smaktini”
- 2 oz Smak Spring Rose
- 1 oz Botanist Gin
- ¼ oz St Germain
- ¼ oz Lemon Juice
- Stir over ice to combine. Garnish with Lemon twist and a sprig of lavender.
