A recipe for success: Lamb Ragu with our 2021 Eleanor Estate Red Blend

Ingredients
- 2.5 Lbs. Ground lamb
- 1.5 Qt Onion small Diced
- 1.5 Qt Celery small Diced
- 1.5 Qt Carrot small Diced
- 3 Tbsp Minced Garlic
- 1 Tbsp Allspice
- ½ Tbsp Cinnamon
- 2 Tbsp Coriander
- 1 Small Can Tomato Paste
- ½ Bottle Red Wine
- ½ Qt Beef Broth
- 1 Medium sized Can Crushed Tomatoes (roughly 28 oz.)
- 1 ½ C. Green Chickpeas
- In a large pot brown lamb, strain off fat and set aside.
Instructions
In the same pot sauté your onion, carrot and celery for 5 minutes, then add garlic and cook for an additional minute.
Next add tomato paste and coat vegetables, after 1 minute deglaze the pot with red wine.
Add the lamb as well as the crushed tomatoes, beef broth and spices.
Cook on low heat cook for two hours, add salt and pepper to taste
Fold in green Chickpeas.
Serve with your favorite pasta, Preferably Tagliatelle.
